Spinach and Bacon Quiche

For a nice weekend brunch or even a light weeknight dinner a quiche always works. You can change the fillings and spices to have something different every time. My wife makes the dough as she enjoys baking.

For the dough:

  • 1 1/2 cup flour
  • 4-5 tablespoons cold milk
  • 4 tbsp unsalted butter cold – cut into small chunks
  • 4 tbsp shortening cold – broken up into small chunks
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper

Mix the flour, salt and pepper together. Add in, alternating, the butter and shortening into the flour. Using a dough blender or a fork, combine until the dough is coarse pebbles. Add in 4 tbsp of milk and bring the dough together in a ball, if it is still dry, add more cold milk. Take the dough and wrap with plastic wrap and place in the fridge for about 30 minutes to chill.

Roll out the dough and place in a nine in pie plate.

  • 6 large eggs, beaten
  • 1 1/2 cups milk
  • 6 strips of bacon
  • 1 cup frozen spinach, drained and chopped
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 1 tbsp garlic, finely diced
  • 2 tsp salt
  • 2 tsp pepper

In a large saucepan cook the bacon until crispy, place them on a paper towel to drain any excess oil. Do not discard the bacon grease left in the pan. Chop the bacon into chunks.

In the saucepan add in the onions and garlic and cook until softened. Remove from pan.

In a large bowl whisk the eggs and milk. Stir in salt, pepper, onions and garlic.

Place the egg mixture in the rolled out dough in the pie plate. Place the chopped bacon, cheese and spinach carefully in the egg mixture.

Cook at 375 F for about 35-45 minutes until eggs are set.

Refreshing Watermelon and Ginger Drink

My wife loves fresh fruits and vegetables. Every day she has a combination of different fruits and vegetables. Here is one of her favorites. All you really need is a good blender and your favorite ingredients.

  • 1 large watermelon
  • 2 limes, squeezed
  • 1 tsp honey
  • 4-6 oz of fresh ginger (vary according to your taste)

Take all the ingredients and place into the blender. This will make at least a gallon of fresh watermelon and ginger juice. It is quite refreshing in the hot summer.

A Tangy Fruit Drink

Honeydew and kiwi actually make a great drink. Add some limes and a touch of honey and you have a great breakfast wake up or a great foundation for mixed drinks.

  • 1 Honeydew melon, peeled and chopped
  • 3 Kiwis, peeled
  • 2 Limes, freshly squeezed
  • 1 Tbsp Honey

Mix all ingredients into the blender and add some ice.

Stuffed French Toast with Bourbon Mayple Syrup

For a lazy Sunday, stuffed French toast is a great way to enjoy a brunch. Normally I use my wife’s homemade bread, but she has been busy with school and had not had a chance to make bread.

Ingredients:

  • 4 slices whole wheat bread
  • Cream cheese softened
  • 4 eggs
  • 1.5 cups half and half cream
  • 1 tsp cinnamon
  • 2 tbsp sugar
  • 1 cup Cinnamon Toast Crunch cereal (for crunch)
  • 4 oz maple syrup
  • 1 oz bourbon
  • 1 tbsp butter (for cooking)

Steps:

  • Warm the maple syrup.
  • Mix the maple syrup and bourbon together and set aside.
  • Spread the cream cheese on the wheat bread
  • Put the covered slices together like you were making a sandwich
    • Set aside

  • Cinnamon Toast Crunch (One of my favorite cereals)
    • Crush and put onto a plate
  • This would be a good time to place the cast-iron pan on the stove and heat to medium.
  • Beat the eggs with the half and half until thoroughly mixed
  • Add to the egg mixture the cinnamon and sugar
    • Set aside
  • Take the sandwich you made with the cream cheese and bread and dip it into the egg mixture. Make sure to coat both sides with the egg mixture.
  • Take the egg covered bread and place it in the crushed mixture of the cereal. Make sure to completely coat the bread with the cereal.

  • In the preheated pan, add the butter and coat the bottom of the pan.
  • Place the covered sandwiches in the pan.
  • Cook until golden brown, then flip over and cook on the other side until golden brown.

  • Slice and serve with the warmed bourbon maple syrup.

Foccacia Breakfast Sandwich

I love my wife’s focaccia bread. I will caramelize onions and take rosemary from our garden, mix with some olive oil and place on top of the bread before it bakes.

Since there is always leftovers, I am always looking for ways to use her bread with future meals.

1. Slice the focaccia bread in half and placed in a buttered fry pan to warm up and toast.

2. Fried an egg and placed some cheddar cheese on top to melt.

3. Placed egg and cheese between bread and it is ready to eat.
