Step 1: The St Louis ribs all rubbed with my homemade spice mix going into the smoker for 3 hours at 225 F.
End of phase 1.
Step 2: Spread some brown sugar on some foil along with more spice rub. Place meat side down on top of the sugar and spice mixture rub.
Wrap up tightly in the aluminum foil. Place back in the smoker at 225 F for 2 more hours.
Step 3: Unwrap ribs and place back in smoker for another 30 minutes or so to heat them up.
Ribs are now cooked.
Falling off the bone goodness. Time to eat.
